Dr. Josephine Lee - Bio

Pay It Forward St. Louis

My Mission Statement - I strive to teach correct nutrition and health principles to affect a positive change to the world.

My Health Journey - I have been a student of health for as long as I could remember.  My mother taught me a lot about traditional Chinese food cures as I was observing her cooking and caring for our family. She frequently carefully prepared tonics for our family during different times of the year according to the seasons. Because of her influence, I decided to pursue a career in medicine.  I graduated with honor (magna cum laude) from the Brigham Young University Hawaii and received a Bachelor of Science (B.S.) degree in biology and chemistry with a pre-med emphasis. I went on to the University of Hawaii to receive a Master of Science (M.S.) degree in nutritional sciences. I got married while in graduate school and soon the first child came. I put my education on hold for the sake of my baby. Soon, two more children came. In the meantime, I started to learn more about natural nutrition and functional medicine. By applying the natural principles of natural nutrition, my family and I experience a new level of health. I experimented with herbs, nutrients, homeopathic remedies, and new cooking techniques on my children. I was amazed how effective these natural remedies worked. Making a long story short, my children were raised without ever needing any western medications and therapy or intervention. When my youngest entered kindergarten, I decided to return to school. This time, to pursue training from a holistic drugless philosophy—chiropractic.  I was exposed to many alternative healing philosophies while in school at Palmer College, the Fountain Head of Chiropractic, in Davenport, Iowa. Here is a summary of my training and experiences: Received a Master's Degree in Nutrition Science from the University of Hawaii in 1984. Worked as a food and nutrition researcher at the University of Hawai. Graduate, Palmer College of Chiropractic in 2003 with the highest honor (summa cum laude). Post-graduate training in Cranial adjustment (Logan College), Internal Health Specialist (Loomis Institute), BioMeridian Analysis, Applied Kinesiology (AK), Contract Reflex Analysis (CRA), Sacral Occipital Technique (SOT), Neural Emotional Technique (NET), and Traditional Chinese Acupuncture. Author, Lecturer, Nutrition Instructor (Logan Chiropractic College) Work with and experience on a variety of nutrition or health conditions including: balancing female hormones, cardiovascular, ADD/ADHD, cholesterol, managing blood sugar problems with diet and nutrition, diabetes, food allergies, candida, immune system problems, digestive system problems, leaky gut syndrome, dysbiosis, gluten intolerance, celiac disease, chronic fatigue and fibromyalgia, hypertension, cholesterol problems, over-weight and obesity, infertility, depression, anxiety, pregnancy, autoimmune disorders, nutritional deficiency, nutritional genetic defects and alopecia. 28 years experience in clinical nutrition working with children, adults and senior citizens.

My Practice Philosophy: I am committed to work with the whole person not just parts. I will look for the roots of your health problems, remove them and free your body to heal itself.

My Guiding Principles of Healing: Our body is design to be healthy, it has all the information innately to allow us to heal, it does not behave badly just to make you feel miserable. Symptoms are how our body communicates to us that there is something wrong going on and it needs help. Symptoms have causes. You cannot fix problems without removing the root of the causes. You must address the pathophysiology of symptoms and know why they exist; you must know what is happening inside the body for it to behave “badly.” Our positive emotion and attitude are part of the healing forces that will greatly increase our healing capacity. Our health begins in the digestive system. What we put into our mouth will determine our health and happiness. Disease is a state of imbalance between nutrition and detoxification, if either is not working in balance, it will lead to symptoms which we call disease. But the symptoms are actually part of the body’s healing process. Removing symptoms does not mean healing; When removing the root cause of symptoms, healing takes place, and the symptoms will go away on their own. Only the body can heal itself with the help of nutrition, positive emotion/expectations and proper physical therapies. Here is how I will work for and with you. I work with a "novel" approach in my assessment process. I see myself as a consultant. Mostly, I evaluate and educate. My concern is for my patients' long-term health and superior quality of life now and into the future. For young people, the effects ripple through generations. Not just covering their symptoms for now. My approach is holistic and functional. I spend a lot of time getting to know you, understand you, your past and present health history, and the stresses in your life; including how you eat, when you eat, and your personal habits. I feel how your body responds to energetic challenges. Find out if you are sensitive to certain foods, how you digest your foods, how you deal with stress, how you sleep, how you use your cell phone, where you work, and how you work. Do you have any hidden toxic foci or infections anywhere in your system? All the primary “foods” that nourish or rob your body and health is put under scrutiny. Is your life balanced in all aspects? Then I formulate a plan of actions, I will explain exactly what is going on in your body, why you feel ill or where the primary root cause of your problem is. I will give you strategies, practices, and guidelines to help you heal yourself. Most of all, I educate. Your body is the only doctor who can heal you. No one can heal you without your willing participation. You do the healing by doing the right things and putting the right nourishments into your mind/body to allow it to work properly. That is the meaning of health--a well nourished, balance and functional body with a clear mind and conscience. I spent a lot of time, testing the diet and nutritional habits, emotional, energetic, structural underpinnings of a client. All the tools I use with a client give me feedback on what is going on in his/her body’s organ, tissues and energy systems. By using symptoms and health history analysis, I can pin point where the system goes out of balance and leads to cumulative negative interferences; causing chronic stress and nutritional deficiencies. Stress depletes nutrients and deficiencies are the result. Since our bodies run on nutrients, deficiencies are similar to when a car runs out of gas. It sputters, slows down and stops. It is recognized in Chinese medicine that all diseases are caused by malnutrition. Healing is a natural process. I can't perform miracles and don't use magic pills. I work with the body's own natural healing mechanisms and support the body to heal itself. For as long as the body is getting the nourishment--food, rest, love, proper exercise--to support it, it will heal itself. That is what I can offer my clients—the tools to allow their bodies to totally heal. It takes time. Some people take longer than others. It is very individualized. It is the knowledge and the truth on how the body functions—the wisdom of our ancestors from different parts of the world that will free up the mind and body to heal. The traditional wisdom of health maintenance and healing practices is what heals. You will be amazed at what a healthy diet, exercise, rest, and nutritional supplements can do for your body. Again, doctors don’t heal; the body heals itself when we apply the correct principles, knowledge and practices of health and healing. In additional to dietary modifications and nutritional supplements, I also use acupuncture, energy healing modalities, chiropractic bodyworks and emotional release techniques to help my clients.
